Le Grand Courtâge Live Joyously Sparkling Cocktail Competition Submission

Cocktail Name: La Grande Vie
Recipe:
• 1.5 oz. Le Grand Courtâge Rosé
• 1 oz. Black Pepper Gin*
• 0.5 oz. Lime Juice
• 0.25 oz. Lavender Syrup*
• 2 Dashes of Peychaud’s Bitters
Garnish: Lavender Sprigs
Glass: Collins
Preparation:
⮚ Crack two clarified ice cubes with a bar spoon and place them in a cocktail shaker
⮚ Pour Black Pepper Gin, Lavender Syrup, Lime Juice, and Peychaud’s Bitters
⮚ Shake vigorously for 20 seconds to chill, mix and dilute
⮚ Double strain over a Collins glass
⮚ Add Raspberry ice cubes
⮚ Pour Le Grand Courtâge Rosé over the ice cubes
⮚ Express lime zest over the cocktail and discard the lime peel
⮚ Place Lavender sprigs over the cocktail using a cocktail clip
*Lavender Syrup
● 4 tbsp. Dried Lavender
● 8 oz. Sugar
● 8 oz. Water Preparation:
⮚ Add Lavender, water and sugar in a Sous-Vide bag
⮚ Seal the bag and Sous-Vide it in 60 °C for 2 hours
⮚ Once sous-vide is complete, immerse the bag in an ice water bath to stop the cooking
⮚ Refrigerate the bag overnight
⮚ Strain the mixture following day using a cheesecloth-lined strainer
⮚ It can be refrigerated, for up to 1 month
*Black Pepper Gin
● 2 tsp. Black Pepper freshly grounded
● 25 oz. Gin ( I used Citadelle Gin)
Preparation:
⮚ Add Gin and Black Pepper in a Sous-Vide bag
⮚ Seal the bag and Sous-Vide it in 60 °C for 2 hours
⮚ Once sous-vide is complete, immerse the bag in an ice water bath to stop the cooking
⮚ Refrigerate the bag overnight
⮚ Strain the mixture following day using a cheesecloth-lined strainer
La Grande Vie is a refreshing sour cocktail made vibrant with the rich and complex flavors of Le Grand Courtâge Rosé, inspired by our endless quest to discover new flavors, along with the pursuit of French culinary innovations.
I designed this cocktail to introduce guests to the fresh and fruity flavors of Le Grand Courtâge Rosé. This cocktail is served in a Collins glass with raspberry ice cubes made out with fresh raspberry juice and lavender sprig as garnish. As a mixologist and the manager of Bastille Brasserie & Bar, the French restaurant located in Alexandria VA, La Grande Vie allows us to bring a unique flavor to guests, elevate their dining experience and showcase the beauty of refreshing rosé.
Cocktail Tasting Notes:
Nose: Citrus, and hints of Lavender.
Palate: Lavender syrup brings out a unique floral flavor in the beginning. Its sweetness is balanced by the fruit and acidic notes of the Le Grand Courtâge Rosé. Longer the cocktail sits, the flavor change from floral to bright raspberry tart making it a unique experience with each sips.
Finish: Cocktail finishes with layers of Raspberry tart and citrus, along with hint of floral notes and black pepper to round out the palate.
The Lavender syrup gives a velvety texture to help to accentuate the smooth texture of Le Grand Courtâge Rosé along with complementing the floral notes this rosé. The sweetness of the cocktail is balanced by the addition of citrus, along with raspberry ice cubes. Not only it helps to enhance the fresh fruit characters of this remarkable rosé, it also accentuate the bright notes as well. This is a very well balanced refreshing cocktail that can be enjoyed any time of a day with a finish reminiscent of smooth seductive and versatile texture of Le Grand Courtâge Rosé.
